Peach & Amaretto Ice Cream

Ingredients / Preparation

  • 1 pint/568ml of double cream
  • 1 oz/30g caster sugar
  • 3 peaches
  • 1 lemon
  • 2 tblsp Amaretto liqueur (optional)
  • 1 oz/30g Amaretti biscuits

Method

Chop the peaches (no need to remove skins) and stew them over a low heat with 4fl oz/11 cl of water plus the juice of 1 lemon until soft. Add sugar and remove from heat. Puree the peaches in a blender or pass through a coarse sieve. Set aside and allow to cool. Whip the cream until fluffy and it forms soft peaks. Gently stir in the peach mixture and add the Amaretto (if using). Lightly crush the Amaretti biscuits and fold into the mixture. Pour into a pre-chilled ice cream maker and churn until frozen or into a freezer container, and freeze for at least 4 hours.
